How do you figure out how many plants to plant?

This will be my first year starting a cut garden and I’m struggling with figuring out how many seeds and plants to buy/prepare for it. Everything I’ve read online usually figures out how many by looking at how much garden space there is but I’m not sure how much space I’ll need yet. I don’t know if this is achievable my first year but I’d love to make around 15 bouquets every week once things start flowering to give to my friends and family. I’m not really sure how many plants I would need to be able to achieve that. I theoretically have up to 2 acres to work with but I’d like to only use the space that I need. My plan for now is to grow strawflowers, snapdragons, sunflowers, zinnias, china aster, statice, gomphrena, and some different foliage like basil and dusty miller. How do y’all determine how many seedlings to start in the spring? I would start all the seeds in the world if I had enough space indoors but I don’t unfortunately. Any recommendations for how many plants I should start for 15ish bouquets a week?
