Recommend me a chili recipe

I love making chili and cornbread, but it's only ever....fine. (the chili. Cornbread I've got down) it's too tomatoey, or if I make it vegetarian it is sometimes lacking depth.

I don't usually have dried chiles around to do something fancy, this is just an everyday meal, but I think I'm missing something.
