Fun things you can do with DEX?

For some minor background. I had a really rough start with Elden Ring. I tried a dex/faith build first (which is what I usually do as my first build in FromSoft games) and it kinda went nowhere and petered out around Leyndell. My second was a half baked Int build that stalled in Mountaintops. This was honestly really disheartening for me. I've played all the Souls games minus Demon Souls multiple times, I never failed to complete a first playthrough and overall these games are my favourite ones in existence a league ahead of anything else in gaming. Something about Elden Ring's scale, length, stat and level caps, build progression and available weapon pool was making me stumble and not really letting me play how I was accustomed to.

I decided enough was enough and planned out the ideal DMGS Int build. A couple days ago I finished the game with it, doing all bosses, all dungeons, picking up every item, doing all NPC quests etc. I had a blast overall. I got to use a variety of spells, a decent selection of weapons that I switched around either for fun or for specific situations and the DMGS was absolutely monstrous. I went into the Godskin Duo fight with half flasks and half HP and completely demolished them. DMGS was killing them so quickly that I was basically spawn camping the boss. In fact it was so good that I decided to not use it for Malenia cause I didn't want to ruin the fight. I ended up doing her with Greatblade Phalanx spell in phase 1 with a Cold infused Bastard Sword and Piercing Fang AoW and I dropped the spell for phase 2 and it was an amazing fight, some 6 hours over the course of 3 sessions (she's probably my favourite Souls boss).

With all that said. With how variety Elden Ring builds can be and how much there is, I'm going playthrough by playthrough trying out as much stuff as possible. I'm saving the Faith build for when the DLC drops, so in the interim I decided to do a Dex build. Mainly to have a shot at the Hand of Malenia (tho with how late that is it's obviously more a NG+ weapon), but also to just trying a non-casting build. I'm going with 80 Dex and 20 Strength (for Cragblade and Bolt, tho also just weapon variety in general). I wanna know, besides those two obvious ones there, what are some really fun and interesting things I can do on a Dex build that I can't do on others and what's really gonna make the build shine and stand out? Specifically talking about weapons here but if there's anything else that comes to mind I'd be happy to hear about that as well.
