Recommend your favourite fantasy books with great prose, deep characters

I just finished A Little Life and am looking for some great fantasy books to get me out of this depressive funk! Specifically some with lovely prose, well-developed characters, and some level of world-building ofc. Wouldn't mind if there's a bit of political intrigue and action.

For context, I love fantasy books in general, from casual and cozy reads to high fantasy and grimdark novels. Tried reading LOTR years back.... no hate but I couldn't really get into it. I'll try again at some point though haha. GoT is also on my radar, but I'm hesitant to pick it up since it doesn't seem like GRRM is completing it anytime soon ha

Other enjoyable reads in recent memory include - Ken Liu's Dandelion Dynasty series, which has become one of my favourites! Speaking Bones is PEAK - Neil Gaiman's works, especially The Ocean at the End of the Lane and Neverwhere - The Spear Cuts Through Water - The Poppy War trilogy - some would say this is more "juvenile/YA" than the other books listed, but there's still something abt it that I adored! I also liked how it covered classism, colonialism and genocide (plus the real life historical background) - Abhorsen series by Garth Nix - The Faithful and the Fallen series by John Gwynne - Emily Wilde's Encyclopaedia of Faeries - a fun low stakes, light read

It doesn't really matter if the books are standalones or part of a series, just nothing too overwhelming please. I know some fantasy series can have like 8 or even 16 books!! Which is a tad too daunting for me
