Chef here. I spoke with 53 guests tonight between 6:45 and 8:15...

48 of those guests ordered a dish from my regular menu.

5 of those guests ordered one of my three specials.

Of those 53 guests, 50 of them looked at a menu before ordering.

Of those 50, 10 of them saw a specials menu.

I spoke with an entire turn tonight, 53 people. Only 10 of them knew I was running food specials and I have a printed specials menu.

Less than 20% of my guests were made aware I was running specials.

Of that 20%, 50% of them ordered a special!

FoH doesn't see the problem. What do you folks think?
