How to make milk chocolate from fresh milk?
I recently started working with chocolate professionally, and one of the things I'd like to be able to do is take whole milk and sugar and convert them as needed to make a milk chocolate. I'd prefer not to use milk powder, as I've heard of some big companies being able to use fresh milk as part of their processes and I want to be able to use all fresh ingredients. I have a melanger, a tempering machine, a sous vide machine, you name it. But I cannot seem to find any info or recipes that don't involve powdered milk. Does anyone know how I could get started on this?
