Your ideal Road Bike 60% climbing 40% flat roads

Hi... Time for a new bike has come and I have something more or less clear:

- I'll do a custom build of the bike since top framesets come with Dura-Ace or Sram Red and I'm ok with Ultegra, I don't need a Dura-Ace/Red.
- I'm in love with Canyon Ultimate CFR, Giant TCR SL, Specialized Tarmac SL8.
- I'd be OK with Hunt wheels or something similar, just want DT-Swiss hubs.

What would you choose?
