Gifted the “Silver Card Experience” at Per Se - I have questions

Hi all,

So for context I was gifted this by my boss as an extra bonus - I’m doing fine financially but NOT able to afford this kind of dining otherwise and have no experience at dining at this level. From what I’ve read on this subreddit it seems like it’s very possible to accidentally get several hundred dollars of add-ons, which I really want to avoid if possible. So my questions are twofold:

1) How do I fit in? What etiquette should I be aware of to blend in?

2) How do I avoid breaking the bank even with the gift card? I’m prepared to absorb the cost of a tip but anything beyond that I do not want to spend on dining out.
