These are turkey stuffed cabbages made in green enchilada sauce! Very low carb high protein. Very yummy!

Recipe: Steam or boil 9 cabbage leaves for about 8 minutes, strain and let cool. I make my filling with half a tube of soy chorizo and 1 lb 99/1 lean ground turkey combine them together I seasoned with a little bit of taco seasoning and garlic salt. Roll a generous amount of the turkey/chorizo meat into your cabbage leaves. Make sure they are sight with the “seam” facing down. Wrap all 9. In a large pan add 2 cans of green enchilada sauce (you can use red if you like) and one can of chicken broth heat to boil. Add rolled cabbages to hot sauce mix cook on low/ medium heat for about 30 minutes make sure to baste them throughout the 30 minutes and move them around a bit so they don’t stick to the pan. I check mine with a meat thermometer to make sure they are cooked all the way through. I like to top mine with cojita cheese, low fat sour cream, low sodium salsa a bit of avocado, pickled jalapeños , cilantro and lime but I promise they are wonderful as is! Great for meal prepping!
