What are your favorite cornmeal recipes?

I was gifted about a bucket and a half of dried corn and I thought it would be fun to make my own cornmeal for the first time. I plan to make standard gf corn bread but I saw a recipe for cornmeal waffles and got really excited! I hadn't thought to branch out like that since I don't get "fancy" with my cooking and generally just keep it simple and basic. What do you really enjoy making with cornmeal?
