Yes that’s gluten free. Yes I feel like I finally did it. Sure I can improve it. But man I actually shed a tear when these came out of the oven.
Nothing changed from the last recipe I posted, I was just very, very calculated about my lamination. I’m very used to using a dough sheeter for croissants so it took some getting used to not only doing it manually but doing with a GF dough. I’m so very proud 🥲
