New to GF. I miss baking.

Hi all! I am new to the gluten-free lifestyle. I have not yet had the opportunity to get tested for Celiac disease (as I fear it will come back negative and will feel crazy in the head), but I do believe I have developed a gluten sensitivity. Over the past few months, I have cut out gluten from my diet and reintroduced it once to "test the waters." I faced fatigue, abdominal cramping, nausea, emesis, and a horrific change in bowel movement.

Before I suspected my gluten insensitivity, I loved to bake. It was my thing; I dreamed of opening a bakery. Now, I feel as if my dreams are crushed. Gluten-free baking isn't the same. The texture and taste aren't the same, nor are the emotions evoked. It doesn't bring me joy anymore. In particular, I miss cinnamon rolls, flaky crescents, and croissants. Unfortunately, I haven't found a good gf substitute in stores or developed a nostalgic recipe yet.

I feel so defeated without my passion.

Do any of you relate? Could you provide any words of wisdom?
