Looking to hold a conference/seminar

Just need some recommendations on where I could hold a conference in Melbourne. We're allied health professionals across Australia who specialise in lower-limb orthotics & footwear. A few key points about us

• There will be 70-90 delegates in attendance
• Over 3 days Thursday, 12 September – Saturday, 14 September 2024
• Minimum of two rooms; one is to be used for lectures/presentations/talks and another will be used for a show room for sponsors to have booths where they'll have on display machinery, equipment, & devices (e.g. 3D printers, orthotic mills, supplies etc.)
• Catering would be nice (but we can organise a third party)

So far people interstate have suggested Crown Casino, which does offer the above mentioned, but if we could avoid it I'd like to. Most of these conferences are held in locations not as dense as the CBD, and has never been held in Melbourne before, I feel as though it would be more cost effective to hold it somewhere outside of the CBD, or at the very least not at Crown.

I know this is a long shot, but if at least one or two recommendations would be nice.
