Passports stuck

Families passport stuck at service Canada due to strike all are ready and just sitting there, we have to plan transportation and certain tickets for our trip early January, they’ve said we can only call 10 business days before trip….then they can ship for us to pick up at a pick up location…..my question what if I say the wrong date for travel and we change it to a later date will I still be able to pick it up?!?!
