Had monk fish liver in japan and it was served with some warm sake. It was very nice and want to replicate the meal but not sure what the sake could be. What sake i can get in the UK would be a good pairing?

Whats left of my Acacia dealbata (Mimosa). got to about 5ft and my dog decided that was too tall so took it down to a stump. Im not sure im going to be able to save it.
