Really important. Bought a new bombilla? Throw it in a pan, cover it with water completely, throw in a spoonful of baking soda and boil for some 5 minutes. There's always some materials leftover from polishing the steel, it's normal but should be cleaned. Repeat every 10~30 days to keep it clean.
